Serves 10 people

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Put the listed items into a pan, bring to a simmer, agitating so the sugar melts. Then, take off the heat allowing it to cool entirely. Transfer to a sterilised bottle, close it and refrigerate it chilled, where it will keep for about four weeks.

To make Cocktail Base: Combine all the liquid ingredients into a big jug, allow it to infuse for one hour, then pass it through preferably using muslin, to ensure it's completely strained.

For serving: Measure 85ml from the premix to a cocktail shaker filled with ice, gently stirring gently for one minute until cold. Pour into an frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
